Herb Stuffed Chicken Breasts

Joanna Corliss, our Occupational Therapist says this is a great dish for entertaining.

4 whole skinless/boneless chicken breasts (approx. 6 oz each)
3 oz package softened cream cheese
3 oz crumbled feta cheese
1/2 teaspoon dried sweet basil
1/2 teaspoon dried oregano
4 slices of bacon
4 tablespoons melted butter

Preheat oven to 275 degrees. Wash and pound each chicken breast until flat. Lay each chicken breast on a flat surface. Spread each with cream cheese and feta cheese. Mix basil and oregano, and sprinkle over chicken. Roll up each breast and wrap with a slice of bacon (use toothpicks if necessary.) Place chicken breasts in casserole dish and top with melted butter. Cover casserole dish with foil and bake 11/2 hours. Uncover and increase temperature to 350 degrees. Continue to bake for 15-20 minutes to allow bacon to brown (or place dish under broiler for a few minutes.) Serve over rice; top with pan juices. Serves 4.
